Tofu is a great source of protein and it picks up any flavor you add to it. I love to marinate tofu in this teriyaki sauce. I use a little maple syrup to instead to sugar to sweeten it up. It's really easy to make and can be cooked in 8 minutes. This recipe makes 3-4 servings. I cook the portion I want to eat for my meal and store the rest in a tight container for the next 2 days.
Here's the recipe:
1/3 cup low sodium soy sauce
2 tbls maple syrup
2 tbls mirin or rice wine vinegar
1 tsp toasted sesame oil
1 garlic clove minced (I love Trader Joe's frozen garlic for easy quick add to recipes)
1 tsp ginger minced (I love Trader Joe's frozen ginger for easy quick add to recipes)
14 oz organic sprouted firm tofu. Drained and wrapped in paper towel for 10 minutes to remove moisture. Cut into 1 inch cubes.
Cooking spray
Mix soy sauce, maple syrup, mirin, sesame oil, garlic clove and ginger in small bowl
Pour mixture over tofu and allow to marinate for a few hours. (If you don't have time marinate for 10 minutes)
Spray saute pan with cooking spray and heat over medium heat. Saute tofu for 8 minutes until tofu is crispy and brown on all sides.
Serve with steamed veggies such as artichokes and broccoli and purple sweet potato or rice.
