My absolute favorite muffins at the moment! Low in carbs, high in protein and low in fat. This muffin recipe makes 6 muffins and 2 muffins = 1 serving. I always double the recipe because everyone in my family eats them and they go really fast.
1/4 cup (or more) almond milk
1 egg
1 TBLS coconut oil
1/4 cup maple syrup
2 TBLS vanilla protein powder
1/2 tsp vanilla extract
1 cup blanched almond flour
1tsp baking powder
Preheat over to 350. Mix wet ingredients together then dry ingredients together, then combine wet and dry. Add more almond milk if too thick. Pour in sprayed muffin tin or use silicone muffin wells. Bake for 18 minutes or till toothpick inserted comes clean. Try not to over bake as the will be too dry.
